Tomorrow is the big day. Crepe Suzette Day. John will be delighted as he loves all desserts. Basically a thin pancake with an orange sauce, you can jazz it up with Grand Marnier or add a scoop if ice cream!
There are two versions of how the dessert got its name, but we dont care. Its cheap and easy to make. make a basic pancake mix with plain flour, an egg, a little milk and a little melted butter. make some pancakes and set aside to keep warm. Then make the sauce –
Juice of 2 oranges
Juice of 2 lemons
50 g of icing sugar
dash of Grand Marnier (not essential)
125 g butter (cut into small pieces)
Place the sugar and the juice of the lemons and oranges into a wide pan, and melt gently, increasing the heat to lightly caramelise, stirring constantly. Reduce the heat and add the pieces of bu stirring to blend in. Then add the Grand Marnier and blend in. Return the pancakes to the pan and turn in the sauce to coat evenly, folding the pancake in half, then in half again. Ready to serve with a final drizzle of sauce over the assembled pancakes.
